A semi-soft white cheese with a texture not dissimilar to a firm, dry Mozzarella which is more often used for cooking.

Scamorza is made throughout Apulia and in some parts of Campania and Molise. Made from pasteurised cow’s milk and also often from a mixture of both cow and sheep milk.  This is definitely one to try because of its beautiful smokey flavour.
